Stuffed Gammon

Ingredients
- 1½kg boneless gammon
- 1 tablespoon oil
- 2 tablespoons curry paste
- 1 cup couscous, cooked
- 1 cup dried apples, chopped
- 1 cup dried cranberries
- ½ cup pine nuts
- Salt and pepper to taste
- ½ cup (125ml) maple syrup
- 2 tablespoons (30ml) vegetable stock
- 2 tablespoons coarse mustard
- Roast vegetables to serve
Instructions
- Preheat oven to 200°C.
- Cut open gammon using a sharp flat knife.
- Heat oil in a saucepan; and add curry, couscous, apples, cranberries and nuts. Season well. Remove from pan and leave to cool.
- Once cool, stuff into gammon and secure with a kitchen string. Place onto roasting tin. Reduce oven to 160°C. Roast for 1 hour.
- In a bowl, combine syrup, stock and mustard. Pour over roast, and cook further until golden.
- Serve with vegetables.
