Perfect as an in -between -meals snack or something small to eat, these sweetcorn cakes are a yummy treat by Ntwenhle Gcabashe

Serves: 2–3
- 1 cup creamy sweetcorn
- 1 cup self-raising flour
- 1 tablespoon castor sugar
- Pinch salt
- 1 egg, beaten
- 3 tablespoons fresh chives, chopped
- 2 tablespoons (30ml) oil
Filling
- 1 canned tuna, drained
- 2 tablespoons jalapenos, chopped
- ½ cup mayonnaise
- ½ cup cream cheese
- Salt and pepper
- Mix creamy sweetcorn, self-raising flour, sugar, salt, egg and chives. Mix well and form smooth batter.
- Heat oil in a frying pan. Spoon the dough, and fry for 5-8 minutes or until cooked.
- Meanwhile, mix tuna, jalapenos, mayonnaise and cream cheese. Season with salt and pepper.
- Serve with sweetcorn cakes.
