Prep time: 20 minutes Serves: 6
- 1 cup red cabbage, shredded
- 1 cup savoy cabbage, shredded
- 1 cup white cabbage, shredded
- Handful fresh coriander, roughly chopped
- 1 large carrot, cut into julienne
- 4 tablespoons walnuts, crushed
- 4 tablespoons pumpkin seeds
- 1 onion, thinly sliced
- ½ cup (125ml) vinaigrette dressing
- Salt and pepper
- In a large salad platter, mix cabbages, coriander, carrot, walnuts, seeds and onion.
- Drizzle with dressing.
- Season with salt and pepper, and serve.
